Are you looking for a seasonal autumn trick? Something that the dining hall doesn’t have? A snack you don’t want to buy from Dunkin, Starbucks, or your local grocery store?


What if I told you that you can make a delicious, seasonal trick right in your dorm room? Yes, that’s right! You don’t need to spend $10 for a sliver of pumpkin pie or walk to the nearest dining hall or even leave your dorm room. It can all be done right where you are right now!

Looking for a healthy snack that’s easy to make and deliciously nutritious? Well, Apple Cinnamon Cookie Energy Bites are perfect for you. This yummy recipe consists of 12 servings and takes 20 minutes to prepare. That might seem like a lot for a quick and easy recipe, but guess what? Once you prep these energy bites, they’re done…there’s no cooking involved. To start, gather the following ingredients: 2 cups of old-fashioned oats, ¼ cup of ground flaxseed, ¾ teaspoon of cinnamon, ½ cup of almond butter, ¼ cup and 1 tablespoon of honey, 1 teaspoon of vanilla extract, a pinch of salt and 1 cup of not packed grated apple (about one medium). Now, in a large bowl, stir together the oats, flaxseed and cinnamon. In another bowl or a liquid measuring cup, stir together the almond butter, honey, vanilla and pinch of salt until well combined. Next, pour over the oat mixture and stir until everything is evenly coated (recommend using your hands to mix more thoroughly). Then, stir in the grated apple. Scoop the mixture into tablespoon-sized portions and use your hands to squeeze it together into a ball. Slightly wet hands will help to keep the mixture from sticking. Finally, store the energy bites in an airtight container in the refrigerator. They are best after 3-4 days. Enjoy!  


This next recipe involves everyone’s fall favorites: pumpkin and cake, yet it’s in a mug! Here’s the ingredients and instructions in order to make one serving of Pumpkin Mug Cake. It only takes one minute to prepare and two minutes to cook. You will need 4 tablespoons of all purpose flour, 2 tablespoons of white granulated sugar, 1 teaspoon of baking powder, ½ teaspoon of cinnamon, ¼ teaspoon of nutmeg, a pinch of ground clove, ¼ teaspoon of ground ginger, a pinch of salt, 2 tablespoons of pumpkin puree, ½ teaspoon of vanilla extract and 3 tablespoons of milk. With all dry ingredients, mix together in a 12 oz. mug. Then, stir in the milk, pumpkin puree and vanilla. Mix well, especially the bottom so there are no dry bits stuck. Lastly, microwave on high for two minutes, top with whipped cream and sprinkle with cinnamon if desired and enjoy! 


Craving apple pie or apple cinnamon cake? Let’s make a healthier version called Apple Crisp. The recipe makes one serving, takes seven minutes to prepare, and only one minute to cook. The ingredients for the apple filling are 1 medium apple (peeled and chopped up), 2 teaspoons of maple syrup (or brown sugar as substitute), a drop of vanilla extract, a large pinch of cinnamon, 1 teaspoon of cornstarch, and 1 teaspoon of water (but that’s optional). As for the crumble topping, you will need 2 tablespoons of oats, ½ teaspoon of butter (melted and softened), 2 teaspoons of brown sugar (or maple syrup), ¼ teaspoon of cinnamon and a pinch of salt. Once you have all the ingredients needed, mix up the ones for the “apple filling” in a bowl. Next, add in 1 teaspoon cornstarch with 1 teaspoon water and mix it into the apples to create that sticky apple pie filling texture. Then, microwave for 30 seconds. Use a spoon to mix up and microwave again for 30 seconds. You will want to mix and repeat 2-3 times or until the apples are softened. While the apples are microwaving, mix up all the ingredients under “crumble topping” in a bowl. Sprinkle it all over the top of the microwaved apple filling. Finally, microwave for one minute and let it sit for at least one minute at room temperature before digging in to enjoy!


Are you in need of a good dipping “sauce” for your apples or crackers? I have the perfect recipe for you… and we’re keeping it seasonal! This next recipe is called the Pumpkin Spice Cookie Dough Mix recipe. It makes six servings within five 5 minutes of preparation and zero minutes of cooking. The ingredients for this necessary dip includes 1 cup of pure pumpkin puree, 3 tablespoons of maple syrup, 2 tablespoons of coconut flour, 2 tablespoons of peanut butter (melted), ½ teaspoon of pumpkin spice and ¼ cup of chocolate chips, which is optional. To proceed, grab a large bowl and put all the ingredients in it. Mix until everything is well combined. That’s it! Now you can serve it with apple slices, crackers, or anything you wish. Enjoy! 


Last, but not least, the final recipe is for one serving of Vegan Pumpkin Spice Latte. Believe it or not… you can make a latte just as good as Starbucks, but healthier and all it takes is five minutes to prepare as well as five minutes to cook. To make this delicious latte, you will need ¾ cup of almond milk, ½ cup of espresso, 1 tablespoon of pumpkin puree (canned or homemade), ¼ teaspoon of vanilla extract, ⅛ teaspoon of cinnamon, ⅛ teaspoon of nutmeg, a pinch of allspice and 2 tablespoons of maple syrup. In a blender, combine all ingredients and blend on high until smooth and creamy. In addition, this latte can either be served hot or cold. For cold, just pour in a glass over ice and serve. For hot, heat the latte up in a microwave for one to two minutes or until simmering. Then, carefully pour into a glass. Sprinkle the latte with cinnamon and enjoy!
